A classic Italian salad with a slight
twist that can be served as a starter, a light lunch, part of a buffet or to accompany another
dish.
These quantities are for a single
serving.
Salad
6 cherry tomatoes
1 slice of mozzarella buffalo cheese
(about 10mm thick)
50g Lardons or sliced streaky bacon
1 clove garlic
Olive oil
Basil
Preparation
Halve the tomatoes lengthways and
arrange, skin-side down on a plate.
In one frying pan, heat a little
olive oil and fry the lardons or bacon to slightly crispy then add the pressed
garlic and cook until the garlic starts to brown.
Cut the cheese and dry out on some
kitchen paper. In a dry frying pan, cook the
mozzarella slice until it goes brown on each side or begins to melt down (about 1 minute each side).
Lay the cheese on the bed of
tomatoes.
Drain & place the lardons or bacon on
top of the cheese.
Sprinkle a few fresh basil leaves on
top and drizzle over a little olive oil.
Serving - Serve with
pita bread slices or a some bread chunks.
