Stir fried food is one of the corner
stones of Asian cuisine. It can be quick and easy
with lots of powerful and assorted flavours that blend together to form
mouth-watering meals. This recipe is simply a base recipe that uses filet
beef, but many other alternative ingredients can be used to create dishes of a
very diverse nature.
These quantities are for 1 very
hungry person at lunch.
Stir Fry
Vegetable oil
50g rice noodles
A small handful of dried black
mushrooms (or fresh if you can find them)
150g filet beef
Half a tablespoon of peeled finely chopped
or grated ginger
2 garlic cloves
2 small dried chilli peppers
1 leek or 2 shallots or
1 onion
Juice from half a lime
Soy sauce
Salt & black pepper
Fresh Coriander, Basil & Parsley
Sesame oil
Preparation in advance
Prepare the rice noodles according to the package. This is normally
either soaking for at least 10 minutes in cold water or cooking for 5 minutes in
boiling water.
If using dried black mushrooms, boil them in water for 10 minutes until expanded
and softened.
Finely chop or grate the ginger, garlic & chilli pepper into a small bowl.
Finely chop the leek/onion/shallot.
Cut the beef filet into 5mm thick sticks (about quarter an inch), by first slicing then cutting the slices into sticks
across the grain.
Chop the coriander, basil and parsley into a small bowl, or use a herb mill.
Cooking
Stir Fry
In a wok (or large frying pan), heat
about 3 tablespoons of vegetable oil to smoking, add in the chopped ginger, sliced
leeks/onion/shallot. Move around the pan and cook for about 2 minutes.
Add in the garlic, ginger and chilli.
Cook for another 30 seconds.
Add in the beef and mushrooms then
season with salt & pepper. Stir and cook for another 2 minutes.
Add in the chopped herbs and the
prepared noodles along with the juice from half a lime. Mix well, add in a
little soy sauce & sesame oil and cook for a further 30 seconds to 1 minute.
Serving
Serve immediately on a plate with
chopsticks or a fork & spoon.
Alternatives - Try
experimenting with other combinations of meat and vegetables including prawns,
chicken, pork, spring onions, carrot sticks, mange tout, etc. etc.
Of course, the noodles can be
prepared apart or rice can be used instead. Chop and change as you like to
arrive at your favourite combination.
