Sirloin Steak Broiled in a Whiskey Sauce with Sautéed Potatoes
(Faux Filet aux sauce Whiskey et Pommes Sautée)
Very basic cooking. Slight
twist in the flavours. Quick and easy and tasty.
These quantities are for 1 person, so
half, double or whatever depending on the number of people you are cooking for.
Ingredients
Extra virgin olive oil
Rock salt
Steak pepper (or crushed peppercorns)
1 sirloin steak
2 small mushrooms
50ml whiskey
A small knob of butter
Sautéed Potatoes
5 small "new" potatoes
1 shallot (or small onion)
1 clove of garlic
Extra virgin olive oil
Preparation in Advance
Boil the potatoes so that they are
only just cooked (not too soft but able to accept a fork).
Chop the shallots and garlic and
mushroom very finely.
Potatoes
Heat a little olive oil in a frying
pan and add the previously prepared potato halves. Heat through & turn regularly
for about 3 minutes. Add the shallot and garlic along with a knob of butter,
keep hot and don't let the onion or garlic burn.
Steak
Heat a dry frying pan. Coat the steak on both sides with the
salt and pepper. On a plate, coat both sides of the steak in olive oil
then re-season with salt and crushed peppercorns. Dip the sliced mushrooms
in olive oil.
Fry the steak and mushrooms together (about 2 minutes each side will be rare).
Pour in the whiskey and broil until the alcohol is mostly burnt off. Do
not allow the sauce to completely reduce down. At the end of cooking, drop in a
small knob of butter and allow to melt into the sauce. Serve hot with the potatoes
alongside.
