Pork Spare Ribs

 

The classic American dish!  Can be baked, grilled or barbequed.  Fantastic with a fresh salad.

 

These quantities are for 2 people.

 

 

Meat

2 racks of pork ribs

1 tablespoon black peppercorns

1 onion

2 cloves garlic

 

Barbeque Sauce

1 medium onion

2 cloves garlic

1 chilli

1 tablespoon brown sugar

5 tablespoons dark soy sauce

200ml tomato ketchup

 

 

Preparation in advance

In a large pot, place in the ribs and cover with water.  Add in the peppercorns and a roughly chopped onion. Squash the garlic with the side of a knife and add into the pot.

 

Bring the pot to the boil and gently simmer for 1 hour.  Remove the meat from the pan and allow to cool. 

 

Cooking

Pre-heat the oven to 200°C.

 

Sauce

Very finely chop the onion and sweat down in a little oil in a frying pan.  Finely chop the garlic and chilli and add into the pan.  Turn up the heat to medium.  Add in the brown sugar, soy sauce and tomato ketchup. Mix well and cook for only 1 minute.

 

Ribs

Place the cooled ribs into a baking tray.  Pour the sauce over the ribs.  Cook in the oven at 200°C for 25 to 30 minutes, turning once half way through.

 

Serving - Serve with a fresh green or mixed salad.  The image below shows the ribs oven baked served with a salad of cherry tomatoes, shallot, mint, olive oil and lemon juice.
