A warm salad that can be served with
any meat at any time of the year. Simple to prepare and very tasty!
These quantities are for a 3 to 4
portions.
Salad
1 can of cannelloni or white beans
(or dried white beans soaked for 24 hours and cooked gently for 30 minutes in
vegetable or chicken stock)
100g lardons (or pancetta or bacon
cubes)
2 shallots
Half a pepper (red, green, yellow, or
a combination)
Sherry vinegar
2 small spring onions (or 1 red
onion)
Fresh coriander
Preparation
Drain the beans thoroughly and rinse
under a cold tap. Allow to stand aside in a sieve to dry off.
In a frying pan, heat a little olive
oil and fry the lardons or bacon with the chopped shallot. Chop the pepper
and add into the pan. After 2 minutes, sprinkle in just a teaspoon or two
of the sherry vinegar along with the chopped spring onion, fresh coriander and
the drained beans. Allow the beans to take a little heat.
Serving - Serve with
pita bread for a light lunch or with any grilled meat. Works superbly with
barbequed or griddled food.
